Chicken Fajita Pita Fun!

These are a very light & healthy pita sandwiches. The chicken has a little bit of kick that really adds to the sandwich. They are not spicy, but are definitely delectable when they hit your tongue. Your family will love them.

2 lbs. thin sliced, boneless skinless chicken breast

2 pkg. (approximately 8) of whole wheat pita pockets

1 pkg. shredded lettuce

1 pkg. shredded cheddar cheese

1 pkg. sun dried tomatoes

6 TBS Adobo ( a mixture of mexican spices sold in grocery stores with the Goya products )

6 TBS paprika

3 TBS chili powder

2 tps Black Pepper

Heat a square grill pan or skillet on medium high heat on stove top. Drizzle the pan with olive oil. Mix all of the seasonings together (Adobo, chili powder, paprika, black pepper). Sprinkle & rub down the chicken with the seasonings until covered. Place on the grill pan. Repeat for all the chicken. Cook until fork tender & thoroughly cooked. ***If you run out of seasonings, simply make more***  After all the chicken is cooked, slice each piece into strips. Cut the Pita Pockets in half & spread mayo on the inside. Stuff the pita 3/4's of the way full with the chicken strips. then add the cheese & sun dried tomatoes. Finally add the lettuce & enjoy your simply & fresh chicken fajita pita sandwich.


you can substitute many different things in this recipe, such as sour cream, fried onions & peppers, salad dressings, vinaigrettes, regular tomatoes, green grapes, or even fruit and vegetables relishes.

Today is January 14, 2010. I'm  16 year old high school student who loves to cook. I have decided to start a blog about fun new recipes to try in the new year. Most of the recipes I will be posting are recipes I, myself, have came up with or altered classic recipes. They can even be made my teenagers ! They are fun, fresh, simple & give a new prospective on the " same old, same old " ingredients that everyone is tried of eating the same way.  They are also very healthy most of the time ! I will try to post as many recipes as possible. Feedback is welcome !
